MATOKE ( RAW BANANA / GREEN BANANA ) IN PEANUT SAUCE
INGREDIENTS
8 medium sized matoke
1 tomato
1 red onion, finely chopped
1 teaspoon cumin
½ dried thyme
1 teaspoon of garlic paste
½ a teaspoon of ginger paste
1 teaspoon of turmeric
1 cup of coconut milk
1 tablespoon of peanut butter
Salt to taste
Vegetable oil for frying
METHOD
In your sufuria/Pot, add the red onions, Parsley stems and thyme. Sautee this for a few minutes then add the tomatoes, salt, followed by the garlic and ginger powder and cumin.You can use fresh ginger/garlic/ Let this simmer for few minutes then add the star ingredient for this dish: peanut butter.
Two table spoon of peanut butter thereafter, add some hot water/stock, bit by bit until your sauce is nice, thick and viscous. Simmer this for about 5 minutes until thickened then add your peeled and chopped matoke, then allow this to cook for about 20 minutes or until the matoke is completely soft and cooked through. You can verify this by poking them with a fork and if it passes through with ease, your food is done!
