The Albanian Tavë kosi or so called ‘’ Tavë Elbasani’’ is one of the most popular dishes in Albania. The main ingredient is lamb and it is just delicious.
1 kg of fresh lamb
1 kg homemade yogurt
2 tablespoons flour
2 tablespoons of rice
In a casserole place the meat, salt, add a little butter, two tablespoons of rice, 1 cup of water. Cover the pan with aluminium foil and bake in the oven at 220 degrees. Once half of the baking time has passed, remove the aluminium foil.
Meanwhile, in a bowl, mix three egg, add a little salt and 2 tablespoons of flour and mix well so that the flour does not become a grain and add about 1 kg of yogurt.
We pass the ingredients in a pot, after we add a little meat juice we pass it on the fire until it boils, we mix it with a spoon all the time.
Add the yoghurt mixture to the meat pan; let all the ingredients cook together until golden brown, about 45-50 minutes.
